Trapcode Particular would probably be the easiest and best looking way. You could use the smoke type particle and change the color over life.
If you don't have particular, the built in particle systems set to directional, a little blur and turbulent displacement, and something like curves or colorama might also be a good way to do it.
Paricular is fine but almost any particle generator should work. It all depends on the trail that you want to create. If it is some live action footage, then you'll need to motion track the bike. Then link the results to a particle emitter/producer.
YOU could also create a single instance (still image) of the trail to link to the motion tracked data. Then precompose and use Echo for a more natural trail effect.

You can also spend a few hours exploring any of the light trail tutorials and adapting one of them.
CC Time FX and TimeFX Blend are great fun and often ignored around here probably because the documentation for the Cycore effectsp rovided by Adobe (from Cycore) is so lame.
Good call Dave, although the OP asked for colourful trails which I thought would exclude trails based on the original bike. But here's a great COW Tutorial - Eran Stern's Time BlendFX COW Tutorial that does well to cover TimeBlendFX.
