About Limit Effect

Hi to everybody
I want to know if its possible to make an limit effect in after effects. What I mean for example is to apply a BandW effect to all de video exception of some same color parts. I have a pretty girl that haves orange hair, and i want everything to be Black and White except the hair. Is this possible in After Effects? What the name of the function??? Or in which tutorial can i find it???
I Know that is possible in Final Cut, but i cant find it in After... Can you Help MeĦĦĦĦĦĦĦĦĦ
