How unusual is it to build mattes without the completed background in place?
In my limited experience, it's very difficult to work the matte's edges without seeing them in their actual place of business. Is there such a thing as an all-purpose temp background? Black and white checker board, maybe?
Ideally, I'd like to build and render out mattes that will require little or no messing around when the plates are ultimately delivered. How far can I reasonably take it?

Oh, you mean the familair Photoshop checkerboard pattern indicating transparency? The one you can actuate just by clicking the appropriate button at the bottom of an AE Comp Window?
Is that the pattern you mean?

Not that one. It's more like grey and white, isn't it. I meant a big fat black and white thing, size-adjustable (which I found in the effects) I heard that white works well. But I tried that once and wound up with a white halo around the edges when I then put up a black background. I guess checkerboard is the way to go.
