I want to create an HD Project but play it off the computer using a touch screen monitor to play videos, etc. using DVD Studio Pro. Is this possible?

Apple DVD Player can play back HD-DVD. But for that matter- QuickTime Player could be used to play back H.264 directly with much better quality.
