Follow the same guidelines as you would producing for tape output. Your levels should be completely locked before you leave FCP.

Usually, you would keep the main level around -12dbFS and -8dbFS, leaving some room for peaks. For AC-3, if your mix is well done and level is constant, leave the DialNorm at -31dbFS. Don't fear the tiger, the Cow is near!

Yup- I meant set levels in whatever editor you use- as FCP is by far the most common with DVDSP.

We master all digital audio headed for DVD to -10dB.
It is a "standard" as far as our particular post facility goes.
I suppose you could go up to 0dB as if you were mastering an audio CD without any issues.
