How do you delete the asset associatied with a particular track. I want to keep the track just "clear" out the asset.

In the outline tab, select the track (or menu if that's what you want to delete) and delete,
then you'll have to add a new track (or menu) and continue authoring.

Can I just delete the asset and leave the track and all its connections in place?

In the assets tab DVDSP won't allow you to delete the asset, it will tell you the asset is in use, you have to go to the outline tab and then the track editor and delete.
