To get access to the ProRes codecs for encoding (only available on a Mac), you need to install some Final Cut component. Compressor from the App store is $50. Install that and you'll get the ProRes component.

Use the PROJECT MANAGER. In the PROJECT menu. You must have some Final Cut studio component for this to happen. FCP, or Compressor, or Motion. Or I think the ProRes codec is downloadable from the App Store.
