Camera for Amature Doco

Myself and my brother are thinking of recording out own travel/surfing/fishing documentary. We do not have a camera yet and are looking at which option to go with. None of us have formal qualifications in film making but we both have a good basic understanding as well as a photography background.
The filming will take place over a few one-two week periods during mostly day light hours but will contain a bit of after dark things too.
We hope to be able to edit and put onto dvd's to hopefully be distributed.
So here's the big question that I'm sure gets asked all the time, what is the best budget camera available? Would a HD cam corder with mic in suffice? Are we better off with an older HD MiniDVD camera?
