720 to 1080i is perfect with a Kona. We've been doing that for about 6 months now with our Kona 3 and haven't had any issues whatsoever. Though I actually prefer capturing / editing in 720p and then make the cross conversion during the Mastering process, but 720p does not support Drop Frame in FCP. So we now cross convert during capture.
If you can edit in 720p and then cross convert the master timeline at the end, you end up with smaller file sizes.
