This question about how to set up a drive is asked on almost a daily basis so in the future, you can do a search for RAID, SATA, etc... to find an answer more quickly.

RAID 0 is the fastest, but no protection.

If the unit offers RAID 5 I would recommend that.

Mirrored is a waste of space and very slow.
