HDV SLow Motion

I posted this in the HDV forum as well, but would also like some tips from a FCp editors Point of view as well. Since this is where I will be editing it.
I will be down at the red bull air races in Detroit this weekend and I really want to get some great footage. I would like to get some shots and put them into super slow motion. I've never really understood the over cranking and under cranking techniques that are used. Could somebody explain this and let me know how to go about shooting something that is moving very fast to get the best slow motion possible?
I will be filming with a SONY FX 1 - 1081i
I also have the choice to film with a Panasonic DVX 100 a
What would you prefer for shooting something like this?
