Fitting files on DVD (Compressor, etc)?

I have a project I'm trying to get out to a client. Usually, a just put the full-size files in iDVD and, if it's over 4.5gb, it fits everything. However, this project is a bit larger than others, so it's compressing very large files (10-20gb), and there are 8 videos... so watching the DVD to check for issues, I can see it's messing up... some of the videos stick or freeze, etc. So... How do I fix this?

If I put the files into compressor, how do I set it to compress ALL 8 videos so that they'll fit on a dvd with a basic menu?
