I'm going to be very unpopular for going against the grain of all these "shame on you" messages but then again that has never been my style. I will answer your question.

I've used Little Snitch and it works great. I like to know when my computer is calling out over the Internet at anytime - it's helpful to see when apps you never knew were active and contacting servers in far off places for who knows what reasons. It's a tool - and I know software pirates use it but it has a lot of helpful non piracy uses.

That being said - I think the Final Cut check that you speak of never contacts the Internet - it simply looks at your network (maybe via Bonjour) to see if there is another copy of Final Cut running. If that happens, the second Final Cut will not start. Unless you can modify Little Snitch to alert you of all inside network traffic (something that would be a pain to see) - then it's not really going to help you.
