If you want to do as little work outside of maya as possible, just animate the ramp color/positoins to get the effect of the surface shader changing day to night. Another method would be to render out two passes, one with the day look, one with the night look, and fade between them. Depending on how anal you want to be, you'll have to take in to consideration the shadow movement as the sun moves across the sky as well as the moonlight shadows.
