Personally I haven't done this before with DOS, as I use Partition Magic and/or Acronis True Image for restores. But google for 'DOS Commands' and you should get an answer.

Think you may have to boot with the XP CD, then choose the Recovery option which puts you into Command mode. Fdisk to wipe out the Vista partition, then ESC to the main menu of Fdisk and create a new partition to house the XP restore. From here, probably XCopy from the XP partition with /S /H...and maybe a couple more options is your best bet.

But I would have thought that Vista has a 'restore previous operating system' function itself since Vista was the one which did the backup during install. Suggest you do a search in Vista for 'restore', 'recovery' and related synonyms.
