need help building a bust...

No, not the kind of bust you were thinking :) I have a shoulder-up shot of a guy and am trying to make it at least semi-3D, it would be nice to get completely 3D though. I don't have a profile shot, which seems like it would be nice for creating the bust (statue) that I'm looking for.

Any ideas?
