If you're shooting a glass cockpit then you're going to get the flicker/rolling CRT effect if the refresh rates don't match between the instruments and the camera. The only fix is to not record the mis-matched refresh rate in the first place. On most prosumer and pro video cameras you'll find the ability to adjust the shutter speed until the problem goes away. Some cameras have an adjustment that is specific to this very problem. Canon's answer to this is called the "Clear Scan" mode and Sony also has this adjustment available in most of their handheld HDV and HD camcorders.
