HVR V1 component/composite out

Hi everyone
I am a self-taught with holes in my knowledge here and there, and have a few (what could be very obvious) questions about our Sony HVR-V1's.
We're shooting a live event with 3 cameras (all V1's) and as well as requiring an output for a live cut to go to s big screen, we want to record to tape also for a later edit.
We normally shoot in HDV. The live mix truck required a composite signal, but I can only see a component out on the V1 - however there is the AV out. Is the same as composite out? and If so, if i took the cable out of AV out, used a RCA to BNC adapter to get to the truck cable should I be ok?
Also, as composite is analogue - does that mean it wouldn't take a HDV signal, and would have to shoot DV?
And finally, is there any reason I couldn't record to tape in the camera, while there is a signal going out via the AV out?
