We do a lot of this type of work.
Verify that your camera can record analog video in thru composite cable that came with your camera.
Verify that the computer is outputting analog video signal out the "s" jack by connecting it to a TV.
If not...then use the (function+cycle video output)buttons on your laptop to get it to send to both laptop screen and the video output.
Then of course connect the two.
Put Camera in VCR mode and press record and pause simultaneously
to enter external record mode.
You should see preview on camera...VOILA

If the camera supports DV pass-thru. ...connect a firewire cable to another computer and set it up to record by using your DV capture program. This allows direct recording of DV footage with out going to tape. Saves on importing time and transport use.
(some of the new ones dont support this feature)

Of course the Canopus ADVC100 that Spot suggested will simplify this a little. Its a very handy box to have around.
