[Greg Andonian] "The only downside so far, is I wanted to try out the adjustment layers but in the menu it's greyed out. Anyone know how to make this available?"

Activate the project panel (by clicking into it or hitting the hotkey Shift-1) first. Now, New > Adjustment layer will be available. It creates the adjustment layer as if it were a media asset, then you can cut it into your timeline and add effects.
