I guess I should first start by saying that 720P
is broadcast quality for some stations. All FOX is 720P. Also 1080 for broadcast is all interlaced, progressive 1080 is for DVD or master format. In the file delivery world it is not nearly as important as it was for tape. Almost all station transcode to get it into their playout server.
All that said, I would get clarification on end use and deliverable. You did not mention a specific codec just the wrapper (.MOV). While I would choose Prores for quality, I would choose DVCProHD or MPEG-4 for compatibility.
I need more information to make a suggestion.
