Hey Stuart,
Sounds like your picky enough about sound to want the good stuff. If it's too rich for the productions you're doing, you might consider wired lavs. I'd think you'd want a mixer before springing for the best wireless lavs. The sound devices 302 will give you three mics into one input if needed on your recorder. The G2s system can accept better lavs than the ones that come with it. The G2 and a countryman lav will still be in that middle price range and the sound will be better than the included mic. G2 lav too good to junk but you'll wish it was better.
Shooting video on a SLR does give you photo lens image quality but the cam is not designed for video. The ergonomics are just not there. I'd think for a one-man crew that could prove an issue.
Beachtek makes an interesting xlr adapter specifically for the Canon 5d. It puts out a tone that overrides the agc on the cam so less noise is added to the audio signal. I don't know if the end result means that with a mixer you can get good enough sound to do away with a separate recorder or just allow you the option for better back up audio recording (always a good idea).
Please let us know how it all works out. I am really interested in production kits for one-person crews on a budget.
