Hi Matt,
Premiere can only utilize a SINGLE Nvidia card for Mercury Playback.
As for processors, what are you editing? Premiere is very snappy with a single Core i7, but if doing a lot of complex After Effects stuff then a dual-processor machine may be beneficial.
