Adobe workflow - Capturing to DVD output.

Hi guys.
I am quite new to digital editing and I was wondering if anyone could give me advice on getting the best possible dvd quality disc produced from start to finish.
What I'm looking for is the ideal codecs to use from shooting, to capturing, to outputting final edit to outputting the
best quality dvd
(not blu - ray) I can.
Below is a list of equipment plus current codecs I use in order:-
Shooting - Sony FS 100 (1080i 50 PAL) and a Sony XDCam EX (1080i 50 PAL)
Capturing to MAC - Premiere CS5.5 - (DVCPROHD 1080i50) - Sequence preset.
Output from Premiere CS5.5 - Format H.264 - HDTV 1080p 25 Higher Quality
Ouput DVD using standard codec in Adobe Encore 5.1
