I should have said this first since that's probably the effect you are looking for.
Position the anchor point all the way to the right of the image first. Position the image back to the center. Now, when you scale the width, it squeezes it to the right. You can animate this using keyframes. You can use this version to replicate the effect you often see on TV where the image squeezes to show credits or upcoming show.
