Hey Jack,
I too have the z1, great camera. I use the HDV recording funciton all the time and have had success at bringing in the HDV capture in. I do find the camera output set to DV and HDV sometimes catches me as I tend to edit in DV from the captured HDV tape. You will need to be sure the HDV project settings are correct and the Camera is setup to output to HDV too. Hook up the camera with it off. Then start up PPro and setup the Project/open a previously made HDV project. Switch on the camera. Ignore the capture method choices popup window. Go back to PPro. Hit F5 to open the Capture window. Make sure the camera settings are set to HDV control. If you hit play it should be playing in 16x9 and you should be seeing it on the screen.
If this aint happening you should first reinstall PPro and if still not working right - contact adobe about the problem. You computer might be having hardware issues? I have had this camera about 9 months, its awesome and I've not have issues with PProCS3 on the PC with it. Hope it gets sorted for you in time for your deadline.
