There's no such thing as NOT playing upgrade roulette. You literally have no idea what you're getting into...unless of course you listen to folks at the Cow...who mostly tell you to steer away from upgrades. :-)

The one thing I never, ever upgrade unless I am literally bleeding and on fire, and this is the only possible solution...after all those people who wouldn't cross the street to pee on me have passed by...

...is to upgrade QuickTime or iTunes. There's a time and a place to upgrade these of course - I'm running the latest version of both. The time NOT to upgrade them is whenever you're doing anything on deadline. You won't have to search far through the Cow to find problem after problem with the latest version of QuickTime killing FCP, and more than a few reports of iTunes causing similar problems. Seriously, wait until you're off the clock. Install updates from Apple MANUALLY, if it all.

The general rule of thumb for upgrades: don't do it, unless it solves a crashing bug....without also creating MORE crashing bugs...which is harder than it sounds.

On a side note, I recently realized that, for the most part, my usage of both Mac and Windows OS features froze around 2002 or so. There are a whole lot of smart, creative people at Apple and Microsoft who've collectively spent billions to add all kinds of great new features since then that I'm paying for, and wasn't using. I actually went to some of those "best new features" articles in consumer magazines, and whaddya know - there are some cool new things!

Learn about them when you have time to uninstall them. :-)
