How to film someone using the iPad??

Hi,
I am trying to film an over the shoulder of someone using an iPad and I am having trouble lighting it appropriately.
The sequence I am trying to film involves a person holding the iPad so that it fills most of the shot and only includes the person's hands. It starts on a bright, almost white, background, and goes to a black background. Then the person shakes the iPad to activate an animation sequence. Lastly, still on the black background, the person types a word into a white text field that needs to be legible.
I'm using a Canon 7D.
First, I tried using a light set up, but the glare is nearly unavoidable. Definitely unavoidable when we need to shake the iPad.
Then I tried filming in the dark, but the exposure gets tricky between the white and back backgrounds. If I set the camera for the black screen, the first shot and text box get blown out and vice versa.
Advice? Suggestions? How are the Apple spots filmed?
