Well, it works!
Was able to use Pages and embed media (inline, not floating), use bookmarks for forward / back jumps, and open it in iBooks (which gives the page flips). All other ePub readers seem to crash with it, unfortunately, which would could give me a little bit more control over the "feel". Thanks!
