Plural Eyes for syncing audio and video. Check out this guys site, he's sort of the Guru of this DSLR stuff and you can get discounts through his site:

I think there is a Canon plug in to help you get footage in to your Mac. Then you need to transcode to Pro Res. All the info is on his site somewhere so check his blogs.
