I haven't seen the specific example you're referring to, but I can tell you that it probably relies heavily on the action being quick. The subject is green-screened and keyed out, then animated to approximate the transfer of energy from the car to the person. You could probably get even more accurate results using the puppet tool in AE CS3 to bend the body as the impact occurs.
