Scott, all I can tell you is that there are several GoPro users on the Sony Vegas forum and they love the camera.
As far as mounts go, the GoPro site shows several different models and I'm sure that one of them (the head strap mount?) could be used on a greyhound.
Good luck with it and please let us know how it turns out, preferably with some footage.
