One thing you can always do is go to File - Properties, click on the little folder icon to the right of the template (tool tip is "Match Media Settings"), pick the file you captured, and then it will match your project settings to the file you captured from your camera.
As for what the various settings mean, click on the "?" on the properties title bar and then click on any field. I did this with the "field order" field and it opened the help file for the File - Properties. Clicking on "Video" (since I was looking at the video tab) tells you what all of those various settings do.
