Just one more tip. After following the steps given by Edward,

"Alternately, turn on the automation tools on the track header - click the button that looks like a gear and choose "Show Automation Controls". Now changing the track volume will change the volume envelope."

At this point you can hit play and now when you adjust the tracks volume control it will write the volume envelopes in real time. You can hear the changes as you go and of course it remembers the adjustments on later playbacks.

Full automation is cool.
