How to change home directory new harddrive

Hi,
I'm new to color. When I set it up, it automatically created the home directory on my boot drive. I tried to change, but change, as it seems to be locked to my boot drive. problem is that it generates a lot of data on my boot drive which is not that big (250GB) and I have 3 other drives I use for media (1x250 and 2x750) I would prefer to make the default files on the 750 disks (or at least on project-by-project basis). Any advise how to change it.
