Grant,
My theory is that if your color space is Rec709 then I would finish your film using Rec709 and a LUT you get from Cinespace. Moving to LOG just makes things more complex and doesn't add any additional quality for your workflow. If you would have shot it LOG, then that would be a different story.
I would use the 10-bit RGB codec for grading.
I would render out 10-bit RGB from Color because DPX files from Color currently has problems many other professional industry tools. I rendered out linear files to DPX files using Color and a Quantel system wouldn't recognize them. Neither would After Effects and I've read that there is the same problem with Lustre. It's something about the DPX files having little endian information instead of big endian. So I would suggest rendering out 10-bit RGB and then using another program like Shake, Glue Tools or After Effects to render the final DPX files.
You'll also need to add your final titles, dissolves, etc after you come out of Color. I would probably do everything you can to avoid rendering RGB files in FCP. I've heard it was only 8-bit RGB for those renders. So I would render anything you need in Motion, After Effects or Shake, then bring it back into FCP if you need to use FCP for a conform tool.
I think I've answered your questions, but you or others might not agree with them. But it's how I would approach the project if you where using FCS2.
