Over the past few years, there have been some large issues with 10-bit processing. When you say 0-255 is good, and animation is good... (Animation codec is not supported by COLOR, by the way), then you are starting to answer your own question.
ProRes422HQ is supposed to be a visually lossless codec -- and for straight recompression generations, it seems to do exactly that. Apple and RED are betting the farm on ProRes to manage the gargantuan data demands that "4K" will bring.

10 bit is an uncomfortable fit in the Octal world, which wants 8, 16, 24, 32. There are also issues with internal Quicktime versions messing with the processing...
