I'm trying to figure out what you mean by "yellow"?

In general it's better to have something shot flat because it gives you more room to work with(hence the proper settings to use when you shoot with a Canon 5D/7D intended for post for example) and just because it looks like "contrastless, saturationless" DOES NOT mean the data isn't there. It's all there because it's a 12 bit image file, which is significantly higher than 10bit.
