All the image processing inside Color is done on the Graphics card (GPU). Plus, the software is optimized/adjusted to work around various bugs/problems/features in these GPUs. So non-recommended GPUs can cause everything from non-working Color, slow response, lack of realtime playback, lack of 16bit and float rendering option, ...
Color is not just another ProApp, but it is a very special beast, and being as much at the suggested requirements as possible definitely will help a lot to actually work with the software.
