Always refer to references when starting a new scene. Save images that you feel are "correct" and compare your corrections to them. Using images from previous episodes is the best way to maintain consistency. Once you're set on any particular episode, keep referring back to the images at the beginning of the episode as you move through it.
Your eyes can be great, but they can and will be fooled by both environmental factors and your own physiology. Take regular breaks, but don't go outside during those breaks. If you do go outside, wait at least 5 minutes for your eyes to readjust before doing any color work.
