Quad-Core vs. 8 core

I'm hopefully going to buy a new Mac Pro soon, and I wanted to know from Color users who've used the application on both versions of the Mac Pro if they had noticed a profound difference in performance using the Quad Core vs. the 8 core Mac Pros.
I'm sure there's a difference as the 8 core has close to twice the processor power and twice the RAM.
But is it enough to justify the addition $800- on a tight budget? How does the Quad-Core do with complex rendering tasks?
I'm especially curious about dealing with HD footage, both compressed and uncompressed. Also any of the other applications on FC Studio, I'm curious to know about any performance differences there...
