Color may have the worst file dialogs of any program I've ever used. It never remembers where you've just been, it has no way of bookmarking favorite or frequently used location. Every time it opens up a file dialog, you need to navigate from the default you've set to where you actually want it to go to.
If you want to render to your RAID, you need to toggle the pulldown menu to the root directory (the forward slash "/" on the top), then to Volumes (should be near the end of the list) and then to your RAID.
