you can keyframe both the Color Corrector 3-Way in FCP and corrections (primary, secondary etc) in Color. Just can't keyframe curves in Color.

This is a common issue - just locate the frame before the exposure change make a keyframe find the frame after the stop up down and make a keyframe. Then simply use the scopes to match the second keyframe to the first ( still store room helps with this)

Depending on the shot you may have to change your keyframe interpolation (in Color) to make the the correction smooth.
