Want www. realitysets.com type virtual set

I am new to video production and have just purchased Adobe Production Suite Premium. I would like to create a virtual set for Adobe Ultra like those demonstrated at www.realitysets.com where an actor can appear to be in front of certain set elements but also appear behind other set elements. .They describe it this way:

"The biggest change you will find in Volume III is the addition of the included alpha channels. Our production staff has painstakingly "painted out" key elements from numerous sets in the Volume III library. Then these elements were used to create mattes that overlay the source footage and the keyed in talent."
