iPods work via Playlists as opposed to folders. Its a lot more convenient. Just go into iTunes and create some playlists (from the file menu).

You can create different playlists, smart playlists and also have iTunes use the Genius option to create new playlists based on your listening habits. In addition, you can choose what playlists to sync and which to not sync, which is very handy.
