Questions About Sync

I received a 5th generation 80 Gig ipod classic for Christmas. I definately had no idea just how frustrating this darn thing is, and getting help from apple is useless. While I have many questions I want to deal with one in particular. I currently have "auto sync" turned off, but I wanted to add some games to it but the only option is to sync. When I click on sync selected games it does that but then proceeds to everything in my library which I do not want it to do. When I try to deselect sync games when it is done it deletes them. Is there anyway at all remotely possible to control sync. This is the reason I have it turned off!!!! I also have had a problem when I tried to sync my music in the past with every time it synced it would resync everything. How do I get it to sync only the new music. Is this even remotely possible or am I just screwed. Any advice would be absolutely appreciated.
