My guess is that your video was too hot. If you created the white letters in photoshop or some other computer program you need to check the levels. never create at RGB of 255.255.255 create at 235.235.235 this will make the video levels within broadcast standards. Same with blacks never create black at 0.0.0 create at 16.16.16 and you should be safe and not have problems with projectors or tape playback.
