I'm a Mac guy and the program I use is fantastic (Call Recorder). I don't have any experience with Windows software for recording Skype conversations, but a quick Google search brought me to this site with a rundown of 15 apps that will do the trick:

Are you currently producing a podcast? You mentioned that for your podcast you use Skype. If you do have a show already, then you will be able to just edit the conversations in to the show and post it.
You asked how you get it on iTunes? Well, what is your current situation? That can be an entire thread in itself if you need to know how to produce the show and then get it listed in the iTunes directory.
