I record all of my new podcasts for Understanding Adobe Photoshop and Photoshop for Video with iShowU. (yiou can see them on iTunes)
We record on camera part with DV camera....
Screen Caps in Animation (very efficent since not much is moving)
Edit them together uncompressed.
Audio goes to both sources (loops out of camera to board, then goes into Mac Line Input)
Record your screen caps to a drive other than your boot drive
