I think that doing a software screen capture is the way to go. I wouldn't bother with doing a hardware capture (outputting to a MiniDV recorder). That was the way to go BEFORE software capture was efficient enough.
You can output your SnapzPro capture to whatever codec you'd like. So, I would just capture your tutorial or whatever it is your doing and export to whatever codec you're editing in. DV?
I don't do the tutorials like you see here at the COW, but I think that the easiest way to put it all together is to write a script, and then voice it. After that, use the VO as timing reference as you move the mouse on the screen doing the screen capture.
Personally, when I do the odd screen capture I don't use Snapz Pro any longer. I really like the progran called iShowU. It's just SOOOO much faster at capturing and then immediately having a usable video for editing into a timeline.
I wish I could be of more help!
